Palta Cardenal
The avocado arrived in Chile brought by the Spaniards from Peru in the mid-17th century; however, this low- yielding variety with a slightly creamy texture did not have any significant impact on national agriculture, in fact, both colonial recipes and those of the beginnings of the Republic.
The Palta Cardenal is one of the main entries in Chilean festivities, normally on New Year's and Christmas festivities, it is very easy to prepare and according to Chileans it is one of the most versatile and easy dishes to cook.
It consists of an avocado stuffed with a small shrimp sald with parsley, lettuce, tomato, coriander and mayonnaise. Accompanied by a pasta that includes turkey or chicken. Is very delicious.
